7 Vegan Crockpot Recipes

Can you imagine a life where you can pretty much just dump all the ingredients in it and walk away, only to come back hours later with dinner ready to be served?

Before I became a mom, I would spend hours in the kitchen conjuring up new recipes and delighting in the responses of whoever I was feeding.

But these days, with two little girls and a busy work life, I have learned how to simplify. There is no better way to do that other than utilizing your timesaving machine – the crockpot!

Better yet, you can feel good about serving any of these recipes to your family as they’re all vegan, gluten- and dairy-free and FULL of veggies!

 

1. Butternut Curry Soup

When you cut open a butternut squash, you can tell immediately that it is loaded with nutrients and powerful antioxidants when you see that beautiful orange color. On top of that, this butternut curry soup recipe has just a handful of ingredients but is loaded with flavor!

Prep Time: 5 minutes

Cook Time: 4-8 Hours

Total Time: 4-8 Hours

 

Ingredients:

  • 1 Butternut Squash, peeled, halved, seeded and cut into chunks
  • Water (enough to cover squash in pot, about 4-5 cups)
  • ½ cup Milk (I like to use coconut milk!)
  • 1 tbsp. Curry Powder
  • 1 tsp. Sea Salt
  • 1 tsp. Black Pepper

 

Directions:

  1. Place all ingredients in a crockpot and cook for 4 hours on high or 8 hours on low (until easily inserted with a fork).
  2. Place in a blender (carefully!) and blend well. I like to put a towel over the top of the blender to be safe.

 

 

2.Apple Cinnamon Oatmeal

I love this recipe because it ensures you have something healthy and ready-to-go in the morning and you can definitely have leftovers as well that easily re-heat. Changing up the toppings is key to keeping things interesting!

Prep Time: 15 minutes

Cook Time: 7 Hours

Total Time: 7 Hours + 15 minutes

 

Ingredients:

  • Olive Oil Spray
  • 3 Apples*, cored and cut into chunks
  • 1 ½ cups Milk
  • ½ cup Water
  • 1 cup Apple Cider*
  • 1 cup Oats (preferably old-fashioned or rolled)
  • 1 ½ tbsp. Maple Syrup
  • ½ tsp. Cinnamon
  • 1 tbsp. Hemp Seeds (optional)
  • ¼ tsp. Sea Salt

Note: add any desired toppings such as dried fruit or nuts

 

Directions:

  1. Spray the inside of your crockpot with the cooking spray. Place all ingredients in the crockpot, stir and cook for 7 hours on low.
  2. Add desired toppings and enjoy!

 

 

3. Vegetable Quinoa Surprise

So it’s almost the end of your week and you have a bunch of random veggies in the fridge with no plan. As long as you have some dry grains such as quinoa in your pantry, you are good to go! Feel free to swap out the veggies listed below with whatever you have on hand and see how easy it is to find a clean meal in no time.

Cook Time: 2-6 Hours

Total Time: 2-6 Hours

 

Ingredients:

  • 1 ½ cups Quinoa, dry
  • 1 tbsp. olive Oil
  • 3 cups Broth
  • 1 Onion, chopped
  • 1 Bell Pepper*, chopped
  • 1 Tomato*, chopped
  • 1 Zucchini, chopped
  • 2 Garlic cloves, minced
  • ½ tsp. both sea Salt and black pepper

 

Directions:

  1. Add the quinoa to the crockpot and then toss with the olive oil to coat. Place all other ingredients into the crockpot, stir and cook for 2-4 hours on high or 4-6 on low.
  2. Top with fresh herbs if available or add a few avocado slices.

 

 

 

4. Black Bean Stuffed Peppers

If you’re finding it difficult to get your family to eat more vegetables, look no further. Adding a bunch of tasty but healthy ingredients to stuffed peppers is the best way to fill everyone up on fiber but also hit that daily veggie goal. This is also a great standalone snack before or after a workout.

Total Time: 3-6 Hours

 

Ingredients:

  • 6 Peppers*, tops and insides removed
  • 1 cup Quinoa, dry
  • 1 can black Beans
  • 1 can garbanzo Beans
  • 1 cup stewed Tomatoes*, drained
  • ½ an Onion, diced
  • 1 Garlic clove, minced
  • 1 tsp. each cumin, chili and onion powder
  • ½ tsp. Garlic salt
  • ½ cup Water
  • Cilantro

 

Directions:

  1. Mix all ingredients except the peppers and cilantro in a bowl and evenly distribute into each pepper.
  2. Place the peppers in the crockpot and add water. Cook for 3 hours on high or 6 on low. Top with fresh cilantro.

 

 

5. Cauliflower & Zucchini Noodle Bowls

When I started limiting my pasta intake, at first I really missed it. That is until I got a spiralizer! You can take any squash such as zucchini or butternut and create amazing noodle bowls that are colorful, filling and a great way to nourish yourself without feeling deprived.

Prep Time: 10 minutes

Cook Time: 3.5 Hours

Total Time: 3 Hours + 40 minutes

 

Ingredients:

  • 1 whole Cauliflower, florets broken apart
  • 2 cloves Garlic, minced
  • ½ an Onion, diced
  • 2 cans stewed Tomatoes*
  • 2 tsp. Oregano
  • 1 tsp. Basil
  • ½ tsp. each black Pepper & sea Salt
  • ¼ tsp. Red Pepper Flakes
  • ½ cup Vegetable Broth
  • 5 Zucchinis, spiralized or cut into thin strips

Note: you can lightly sauté the zucchini if preferred

 

Directions:

  1. Place the first four ingredients in the crockpot, add all seasonings, then add the broth. Cook on high for 3.5 hours.
  2. Evenly distribute the zucchini noodles into bowls and top with the cooked mixture.

 

 

6. Veggie Egg Casserole

This is my absolute favorite dish to serve when hosting brunch or needing a dish to pass. I also love making this on Sunday evenings and then I’ll eat one serving each morning and have breakfast taken care of. Feel free to change up the veggies listed!

Prep Time: 10 minutes

Cook Time: 2 Hours

Total Time: 2 Hours + 10 minutes

 

Ingredients:

  • Olive Oil spray
  • 1 cup Broccoli, chopped
  • 1 Bell Pepper*, chopped
  • ½ Onion, chopped
  • ½ cup Mushrooms, sliced
  • 1 clove Garlic, minced
  • ¼ cup Salsa* (optional)
  • 6 Vegan Eggs
  • ½ cup Milk
  • ¼ tsp. each Black Pepper, Sea Salt, Garlic Powder, Chili Powder (can sub any of these)

 

Directions:

  1. Spray the inside of your crockpot with the cooking spray. Place all the veggies in the bottom of the crockpot and top with salsa.
  2. Combine the eggs and milk, then season. Pour over veggies.
  3. Cook on high for 2 hours but start checking around 1 hour and 30 minutes. Casserole is done when a fork comes out clean after being inserted.

 

 

7. Mushroom Risotto

What’s great about mushrooms is they’re actually a superfood and are known to support the immune system. I like to make this anytime but especially if it’s cold and flu season. Be sure to follow the directions exactly as this ensures the rice and mushrooms cook properly. Enjoy!

Ingredients:

  • 16 oz. bag of Brown Rice
  • 32 oz. Mushroom Soup (prepare if condensed)
  • 2 Onions, chopped
  • ½ cup Vegan Butter, melted
  • 1-2 tsp. sea Salt
  • ½ tsp. black Pepper
  • 8 oz. box of Mushrooms, sliced

 

Directions:

  1. Place the rice in the slow cooker first, add soup, onions, butter and seasonings.
  2. Layer the mushrooms on top and press down gently.
  3. Cook for 3 hours on high or 6-8 hours on low.
